Chipotle Hot Salsa Copycat Recipe

You can hate on Chipotle all you want, but I love their red (hot) salsa. I was able to track down a clone recipe that gets pretty close, but I modified it. And I think that it is just as good if not better than the original.
Ready? Here we go.
Ingredients
- 4 Tomatillos (quartered)
- 20 – 30 Arbol peppers (dried) – I use 30 but you could use less
- 3 cloves of garlic
- 1tsp salt
- 2tsp cumin
- 1/2 tsp black pepper
- 1.5c water
- (cilantro – handful more or less if desired)
Directions
- Remove stems from peppers.
- Remove about half the seeds from peppers. (more or less depending on spiciness)
- Put the peppers, tomatillos, garlic cloves, salt, cumin, pepper, and water in a sauce pan.
- Bring ingredients to a simmer over medium-high heat.
- Cover and cook for 15 minutes.
- Uncover and cook for an additional 5 minutes. Stir regularly.
- Pour everything into a blender or food processor.
- Blend.
- (Add cilantro if desired – and blend again)
- Ready to eat immediately OR let meld in fridge for a few hours
