Boiled Peanuts

Ingredients

  • 2 lbs raw peanuts in shell (or green peanuts)
  • 1/2 c kosher salt
  • 3 tblsp cajun seasoning (see below)
  • 1 tblsp crushed red pepper flakes
  • 1 tsp garlic powder
  • 1 tsp chipotle powder (optional)
  • 4+ qrts water

  • >Cajun Seasoning

  • 1 tbsp paprika (smoked if you have it)
  • 2 tsp kosher salt
  • 2 tsp garlic powder
  • 1 tsp ground black pepper
  • 1 tsp ground white pepper
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp cayenne powder
  • 1 tsp dried thyme

Directions

Stove Top

  1. Place peanuts, water, and all seasoning into a 6-8 qt dutch oven. The amount of water needed should cover the peanuts when they are pushed down.
  2. Set to high heat until boiling, and then set to simmer.
  3. Cover dutch oven. Let simmer 6-8 hrs (2-3 hrs if using green peanuts). Checking every hour to make sure the water level is adequate, adding warm/hot water to the pot as needed.

Instant Pot

  1. Place peanuts in a 6-8 quart instant pot. Add all spices. Pour in 4 qrts water or enough to cover the peanuts when they are pushed down.
  2. Lock the lid into place. Set to pressure cook on high for 93 minutes (74 min for green).
  3. Once the timer goes off, perform a natural release. Once the steam button drops it’s safe to open .

Crock Pot

  1. Place peanuts, seasonings/spices into a 6+ quart crock pot. Add in 3-4 qrts water (enough to cover peanuts when they are pushed down.
  2. Cover. Set to Low. Cook 36-38 hrs (22-24 hrs green).
  3. Add water every 8 hrs if needed.
